It does not seem to be possible to rename an Additional Info Column permanently.
After selecting String 1, we can rename it on a document (journal, account), but the name is not modified permanently.
It would be nice to rename String 1 to something else and this would apply everywhere.

Yes. The Title of String1 is local to the table view that you had assigned the description. The description will not appear in other Views and on other machines except for the default String 1 once the Column is added to the table view.
